Carrot Top Pesto is a great way to reduce food waste while adding a fresh, herby twist to traditional pesto. It creates a bright, flavorful sauce that works well on pasta, roasted vegetables, sandwiches, or as a dip. I've even roasted carrots using this pesto, making the most of the entire vegetable! Reminder: Use organic carrots to ensure they are free from pesticides.
Carrot Top Pesto:
• 1 cup chopped organic carrot greens
• 1/2 cup olive oil
• 1/4 cup Parmesan cheese
• A handful of walnuts
• Salt to taste
