Mathey Wale Aloo, also known as Matthe Wale Aloo or Dahi Aloo, is the kind of simple vegetarian potato curry that feels like home. Made with boiled potatoes, buttermilk, warm spices, and a flavorful tadka, this dish pairs perfectly with puri, naan, roti, or rice.

INGREDIENTS:
Potatoes (boiled) - 4 medium
Buttermilk - 2 cups
Warm water - 2 cups
Red chili powder - 1 1/2 tsp
Coriander powder - 2 tsp
Cumin powder - 1 tsp
Turmeric powder - 1/4 tsp
Cumin seeds - 1/2 tsp
Mustard seeds - 1/2 tsp
Dry whole red chilies - 2-3
Green chilies, chopped - 2-3
Curry leaves - 5-6
Ginger-garlic paste - 1 tsp
Salt - 1 1/2 tsp
Oil - 4 tbsp
Chopped cilantro - handful

INSTRUCTIONS:
1️⃣ In a bowl, add warm water. Peel and lightly mash the boiled potatoes, keeping them chunky. Set aside.
2️⃣ In a small bowl, mix the powdered spices with 2-3 tsp of water to make a spice slurry.
3️⃣ Heat oil in a medium pot over medium heat. Add cumin seeds and mustard seeds, then let them splutter.
4️⃣ Add dry red chilies and curry leaves. SautΓ© for 1 minute.
5️⃣ Add ginger-garlic paste and green chilies. SautΓ© until the raw smell goes away.
6️⃣ Add the spice slurry and cook until the oil starts to separate.
7️⃣ Add the soaked potatoes and mix well.
8️⃣ Turn off the heat, pour in the buttermilk, and stir continuously to prevent curdling.
9️⃣ Turn the heat back on and bring the curry to a gentle boil.
πŸ”Ÿ Add salt, cover, and simmer on low for 4-5 minutes, stirring occasionally.

Garnish with fresh cilantro and enjoy with puri, white rice, naan, or roti.

Viral Reshmi Sheet Kebabs, made easy in the oven! πŸ”₯ Soft, juicy, creamy, and full of flavor, these chicken kababs are perfect for serving with chutney, naan, salad, or rice.

INGREDIENTS:
2 lbs boneless chicken, cubed
2 medium onions, chopped
1/2 red bell pepper, chopped
Handful of cilantro
3–4 green chilies
1 tbsp ginger-garlic paste
1 tbsp lemon juice
1 1/2 tsp garam masala powder
1/2 tsp black pepper powder
1/2 tsp white pepper powder
1 tsp crushed red pepper flakes
1 tsp chicken powder, optional
1 1/2 tsp salt
1 tbsp ghee or butter
3 tbsp fresh cream

INSTRUCTIONS:
1️⃣ In a food processor, add onions, red bell pepper, cilantro, and green chilies. Blend until finely chopped.
2️⃣ Transfer the mixture to a kitchen towel and squeeze out the excess water. Set aside.
3️⃣ Add the chicken pieces to a food processor and blend until smooth. You can also use ground chicken for this recipe.
4️⃣ Transfer the chicken to a mixing bowl. Add lemon juice, ginger-garlic paste, the onion mixture, spices, and fresh cream. Mix well.
5️⃣ For a smoky flavor, heat a small piece of charcoal on the stove. Place it in a small bowl or foil in the center of the chicken mixture, drizzle with oil, cover, and let it smoke for 5 minutes.
6️⃣ Marinate the mixture for about 1 hour.
7️⃣ Brush a sheet pan with oil, spread the chicken mixture evenly, and brush the top with oil.
8️⃣ Make vertical cuts in the mixture so the kebabs are easier to separate after baking.
9️⃣ Bake at 350Β°F for 25–30 minutes. For a golden top, broil for 5–7 minutes.
