North Gulf Farms' Naked Jade oyster will not look identical every month of the year. Salinity changes, seasons shift, and the oyster reflects all of it. What Brad commits to is presenting that product at a reliable standard buyers can count on, season after season.

He compares it to tomatoes. Not the same in winter as in summer, but dependable enough that restaurants build their menus around them year round. That dependability is what opens doors for Gulf Coast farmers to reach markets they have never had access to before.
