BAILEY’S & HENNESSY SWEET POTATO CHEESECAKE CUPS 🍠
***This recipe makes 16 cheesecake cups and requires overnight prep***

Start by baking 2 sweet potatoes at 450° for 1 hour
Ensure that they are clean and poke holes all around them

CRUST 🥧
Take 1.5 packs of graham crackers, add to food processor, crush, melt butter, and combine
Bake at 350 for 5 mins then set aside

CHEESECAKE 🧀 - add to food processor
1 brick of SOFTENED cream cheese
Half a pint of Sour Cream
1 egg
Brown Sugar (not too much)
Splash of vanilla and almond extract
Pinch of salt
Bailey’s or whatever Ireland Cream Liqour (Splash)
Henndawg (Splash)
Lemon juice (drip drip)

SWEET POTATO 🍠 FILLING
2 Sweet Potatoes
Cinnamon, nutmeg, ground ginger, vanilla extract, almond extract, brown sugar, pinch of salt (season to taste)
Splash of Baileys
Splash of Henny
***TASTE BEFORE ADDING 1 EGG***

Add 2TBSP of cheesecake filling to crust that was set aside and add a dollop of sweet potato and marble it
Bake at 350° for 20 mins and when cool, place in refrigerator to set overnight
