Potatoes: 6 medium Yukon Gold potatoes, 1½ tsp kosher salt, ½ tsp black pepper
Bravas Sauce: 1½ tbsp olive oil, ¼ cup diced onion, 1 clove garlic, 1 tbsp flour, ½ tsp smoked paprika, ⅛ tsp cayenne, ½ tbsp tomato paste, ½ tsp red wine vinegar, ½ cup chicken broth, salt to taste
Aioli: ¼ cup Greek yogurt, ½ tsp dijon, 3 cloves garlic (minced), 1 tsp lemon juice, pinch of salt
Instructions:
1. Bravas Sauce: Sauté onion in olive oil 3-4 min, add garlic 30 sec, stir in flour 1 min. Add remaining ingredients, simmer until slightly thickened, then blend smooth.
2. Aioli: Mix all ingredients and set aside.
3. Potatoes: Cut into chunks, parboil 5 min, drain, shake to rough up edges, season with salt & pepper.
4. Crisp: Pan-fry in oil until golden OR roast at 475°F for 25 min OR air-fry at 400°F for 10 min.
5. Serve: Top potatoes with bravas sauce, aioli, and fresh parsley.

Ingredients:
1 cup water
1/3 cup butter
2 tablespoons granulated sugar
1/4 teaspoon salt
1 cup flour
2 large eggs
1 teaspoon vanilla extract
Olive oil
Bring water, butter, sugar, and salt to a boil. Lower the heat and stir in the flour until a smooth dough forms. Let it cool slightly, then mix in eggs and vanilla until fully combined. Transfer to a piping bag fitted with a star tip, pipe the churros, and freeze for 1 hr to keep their shape.
Heat olive oil in a deep pan over medium heat (about 350°F). Carefully add churros in batches and fry for 2–3 minutes per side, until golden brown. Remove and place on a paper towel–lined plate to drain. Roll in cinnamon sugar while they are still warm. Serve with chocolate sauce in a Bardes Plastics container!
Note: I used a small piping tip, so my churros came out thinner. Choose your piping tip based on how thick you want them.
