My wife loves this salad and it is one that we make during our Masterpiece Retreats.
Pair it with any protein (beef, chicken, turkey, etc.) and essential fatty acid (avocado, salmon, etc.) -- it's perfect for a lunch, snack meal, or dinner.

Caprese Salad
Ingredients
* 1 large vine-ripened tomato, sliced
* 1/4 pound fresh mozzarella, sliced
* 1-10 fresh basil leaves, torn or cut into thin strips
* 1 tablespoon avocado oil
* 2 tablespoons balsamic vinegar
* Himalayan or Sea Salt to taste (optional)
* Black Pepper to taste
Directions
* On a serving dish or plate, arrange tomato slices, mozzarella slices, and basil alternatively overlapping.
* Whisk avocado oil and vinegar together. Pour over the tomatoes and mozzarella. Season to taste with salt (optional) and pepper.
