What makes an espresso?
It is not the bean. It is not the mix. It is not the roast. It is not that it has to be manufactured by a certain type of machine. What makes espresso is the way the coffee is prepared.
Espresso is a small dose (1 to 2 ounces) of pressure brewed coffee, using about 1 tablespoon of finely ground coffee. Prep takes about 25 to 30 seconds and when done correctly it will present a layer of rich, dark golden layer on top called crema. This crema is an indicator of a quality espresso.

Taster's beginners guide: ESPRESSO
- Aroma
This is the first thing you experience when you lift your cup, smell and taste are closely linked. Many of coffee’s more complex and subtle flavours are actually derived from your sense of smell.
- Body
This is the density of the coffee on your tongue. Before you swallow, let it stay on your mouth and feel the texture.
- Flavor
Don’t be overly specific. Start with a broad category. Is it a fruity flavour that you can taste? Is it more citrusy or a berry-like? You might want to use a flavour wheel as a reference.
- Aftertaste
The aftertaste is what lingers on your tongue and the back of your mouth. The finish is the last thing you remember when you taste espresso.
