* 2 chicken leg quarters or 2 thighs and 2 drumsticks
* 2 tbsp olive oil or melted butter
* 1 tsp garlic powder
* 1 tsp onion powder
* 1 tsp Italian seasoning
* 1/2 tsp paprika
* Salt and black pepper
* 1½ lbs potatoes, peeled and chopped
* 3 tbsp butter
* 1/3 to 1/2 cup milk or cream
* 12 oz baby carrots
* 1 tbsp butter
* 1/2 tsp garlic powder
* 1/2 tsp dried parsley

Directions:

1. Rub the chicken with olive oil or melted butter, then season with garlic powder, onion powder, Italian seasoning, paprika, salt, and pepper.
2. Bake at 400°F for 40 to 50 minutes, until golden and fully cooked. Broil for 2 to 3 minutes at the end if desired.
3. Boil the potatoes in salted water until fork-tender, then drain and mash with butter, milk, salt, and pepper until smooth.
4. Cook the carrots with butter, garlic powder, parsley, salt, and pepper until tender and lightly glazed.
5. Plate the mashed potatoes and carrots, then top with the roasted chicken and serve hot.

* 1/2 cup Parmesan, grated
* 1/4 cup pasta water
* 1 tsp salt
* 1/2 tsp black pepper
* 1/2 tsp garlic powder
* 1/4 tsp Italian seasoning
* Red pepper flakes and parsley, optional

Directions:

1. Cook penne in salted water until al dente, reserving 1/4 cup pasta water, then drain.
2. Season steak with salt, pepper, and garlic powder, then sear in olive oil until browned and cooked to your liking. Remove and set aside.
3. In the same skillet, add broccoli with 2 tbsp water, cover, and steam for 3 to 4 minutes until crisp-tender.
4. Lower heat, melt butter, then cook garlic and red pepper flakes for 30 seconds to 1 minute until fragrant.
5. Return steak and broccoli to the skillet, add penne and pasta water, then toss in Parmesan and Italian seasoning until glossy and coated.
