Yes, my lovelies!! This IS tofu!! It was not flavorless! It was not spongy! But it IS all gone!! 😆 This was my 1st time using a recipe I found right here on ! It was posted by Nico of The Plant-Based Cooking School (). Thank you, Nico! As you promised, it was super easy, flavorful, and chewy--especially after a night in the fridge!

I made a few small changes. Instead of extra-firm organic tofu, I used my fave, super-firm organic tofu from Trader Joe's (). Thanks, TJ, for the great price--well, even with the $0.70 increase, it's still affordableI used a little less sea salt than called for. (And I think I can cut it down even further--or out--next time.) I used a new BBQ sauce from TJ's, a sriracha BBQ sauce. And one cup was plenty! I had no need to add more and bake the tofu any longer.

I know from my usual curried tofu "steaks," tofu will dry out more if you leave it in the oven after you turn it off. The longer you leave it, the more it dries out. So the leftovers were super chewy today!

I ate some of the chunks with my veggies. I sautéed collard greens with a package of slaw mix. I added Bragg's Liquid Aminos, garlic powder, powdered ginger, and Whole Foods' peanut sauce. Quick and easy veggies! And no oil was added! I ate the rest of the tofu as a sammy! A pretty damn good late lunch/early dinner I must say! Vegan eats!! 😋 Chirp, chirp!!

I finally made it to the Delacorte Theater in Central Park to see Hamlet! Shakespeare in the Park is one of the things I look forward to the most when summer graces the Big Apple! Can't believe I've never actually seen Hamlet before! 😳 So I was looking forward to it!

I do like to have an idea re: the story, so I often check out a good synopsis beforehand. I find this step to be really helpful, especially if I'm not so familiar with the story. Definitely a good idea for Hamlet!

It was a gorgeous, rain-free night! (I went to great lengths to pick the right day!) No jacket was needed--just the way I like it!

As you see from the set, the "house" of Hamlet is sinking. Things go from bad to worse. But this Hamlet has some unique surprises! The lead character sings and moonwalks as the tragedy unfolds.

I enjoyed the entire production, the cast, and the production! I can't say Hamlet is my favorite drama by the Bard--I think that has to be Romeo and Juliet! But I've finally seen Hamlet and it didn't disappoint!

OH! There was one piece of terrible news though! The Delacorte will close after this season for 18 months--apparently for much needed renovations!! 😱 No more SITP till summer 2025!! How will I survive 2024 without it?? 😢 Chirp, chirp!!
