Microgreen Pesto

2 cups Microgreens of your choice
-basil, arugula, broccoli, sunflowers
3 Tbsp pine nuts
4 peeled cloves garlic
1/2 tsp salt
4 Tbsp Nutritional Yeast (or Parmesan cheese)
2-3 Tbsp extra virgin olive oil or avocado oil
4-6 Tbsp water
*optional-add zest and juice of one lemon for added brightness.

Combine all ingredients, except water, into a food processor and blend well. If you are using lemon juice back off the water amount. Add the water to get desired consistency. It shouldn’t be real thick or runny.
Stores great in refrigerator for a week or up to 6 months in the freezer.

Great paired with Guardian Grains pastas and our garlic parmesan sourdough made with Jaydobo’s Garlic Lovers seasoning.
Add in mushroom, onions, chicken, or shrimp. Great over white fish as well.
