The Great PoBoy Debate
By a Hungry Texan With Too Much Time to Think
The other day I found myself sitting around thinking about one of life’s great unanswered questions…
If a “PoBoy” sandwich gets upgraded… what in the world do you call it?
Because let’s be honest — “PoBoy” may be one of the greatest food names ever created. It tells a whole story before the sandwich even hits the table. You already know it’s gonna be overstuffed, messy, probably dripping somewhere, and likely require at least three extra napkins and a short nap afterward.
But then my brain started wandering.
What happens when the PoBoy gets fancy?
Do we call it a “Rich Man”?
Because I’ll tell you right now… nobody has ever walked into a restaurant and confidently said:
“Yeah, I’ll take the East Coast Chicken Rich Man with extra pickles.”
That sounds less like a sandwich and more like a guy trying to sell you a condo near a golf course.
And imagine ordering a “City Style Shrimp Rich Man.”
Absolutely not.
A PoBoy has soul. It’s country. It’s Cajun. It sounds like somebody’s grandma made it after church while Zydeco music played in the background and somebody’s uncle was arguing about fishing conditions.
The word “PoBoy” just FEELS right.
Honestly, changing the name of a PoBoy after it gets bigger feels kinda like my friend Pepper changing her name to “Paprika” after she got famous.
Now sure… Paprika sounds expensive.
Maybe wears sunglasses indoors.
Probably drinks sparkling water for no reason.
But deep down everybody still knows her as Pepper.
Same goes for a PoBoy.
You can stack it taller.
Load it with more shrimp.
Serve it on a platter the size of a truck hood.
But at the end of the day… it’s still a PoBoy.
Now maybe an upgraded PoBoy just needs a bigger Southern nickname altogether.
Maybe:
Boss Hog PoBoy
Bayou Boss
Magnolia Monster
Full Belly Special
The Belly Buster
Treehouse Tower PoBoy
The Big Timber PoBoy
See now THOSE sound like sandwiches meant to be served with a sweet tea big enough to need both hands.
Personally, I think once a sandwich reaches the point where shrimp are falling out the side and you gotta lean forward just to take a bite… it deserves a title upgrade.
But I’m curious what everybody else thinks.

When we pulled up in the Ole Food Truck we just wrote "MEATLOAF and Gravy" on a chalk board and they could picture it in their minds!
