We have anther steer at the butcher It's $7/pound charged on the animal's hanging weight and averages about $1350/quarter. (Hanging weight has been between 750 and 800). That includes all processing costs and vacuum sealing of the meat. It's all labeled with cut of meat and pounds on it. A quarter will be approximately 125 pounds of meat and would consist of a true quarter of every cut on the animal. The animal will hang/age for 2 weeks so will be ready around the 20th of February.

Ohoopee Angus skirt steak on the grill. Honestly this one was better than Filet to me.
