Ingredient For the Rolls For the Peanut Sauce
Round Rice Paper Wrappers 12 Creamy Peanut Butter
Cooked Shrimp, peeled and halved lengthwise 24 Hoisin Sauce
Rice Vermicelli Noodles, cooked 4 oz (115g) Water
Lettuce Leaves (Butter or Red Leaf) 12 Rice Vinegar
Carrots, julienned 1 large Soy Sauce
Cucumber, julienned 1 small Sesame Oil
Fresh Mint Leaves 1 cup Garlic, minced
Fresh Cilantro 1 cup Crushed Peanuts (for garnish)

For the Peanut Sauce Amount
Creamy Peanut Butter ½ cup
Hoisin Sauce ¼ cup
Water ½ cup
Rice Vinegar 1 tbsp
Soy Sauce 1 tbsp
Sesame Oil 1 tsp
Garlic, minced 1 clove

Instructions:

Prepare all Fillings: Cook the rice vermicelli according to package directions, drain, and rinse with cold water. Have the halved shrimp, lettuce, julienned carrots and cucumber, and fresh herbs all prepped and ready in separate bowls.

Make the Peanut Sauce: In a small saucepan over low heat, whisk together all the peanut sauce ingredients (except the water). Gradually whisk in the water until the sauce is smooth and has reached your desired consistency. Remove from heat. You can also simply whisk everything together in a bowl. Garnish with crushed peanuts before serving.

Prepare the Workstation: Fill a large, shallow dish (like a pie plate) with warm water. Set it up next to a clean, flat work surface (like a cutting board or damp tea towel).

Soften the Wrapper: Submerge one rice paper wrapper in the warm water for about 15-20 seconds, until it becomes soft and pliable. Carefully lay it flat on your work surface.

Fill the Roll: On the third of the wrapper closest to you, place a lettuce leaf. Top it with a small handful of rice noodles, some carrots, cucumber, mint, and cilantro. Don't overfill.

Roll: Fold the bottom edge of the wrapper up and over the filling snugly. Place 3-4 shrimp halves in a row just above the filling. Fold the left and right sides of the wrapper in towards the center.

Finish Rolling: Continue rolling from the bottom up into a tight cylinder. The shrimp should be visible through the top layer of the wrapper. Place the finished roll on a plate and cover it with a damp paper towel to prevent it from drying out while you make the others.

Serve: Serve the fresh spring rolls immediately with the peanut dipping sauce.
