Spinach Acorn Squash Soup!
Easy recipe
Half acorn squash - steamed in microwave (microwave safe dish add a little water and put squash open side down for 5 ish min)
Scrape and put in blender
Add spinach leaves
Garlic
Sat and pepper to taste
Other seasonings you like (I used smoked paprika)
Low fat milk or low fat Greek yogurt
1/2 cup low sodium Vegetable broth

Blend
Pour
Heat
ENJOY
*I sprinkled green unsalted pumpkin seeds and 1/4 cup shredded mozzarella cheese on top*
