Beyond the meat-filled pitas, kitchens are plating horiatiki salads, pastitsio, and feta-laden cheese pies, then pouring wines from across Greece's regions and cold Greek beer. Pappa Gyros in Katy, run by Christos Bastios, even started in a gas station before earning a spot on The Texas Bucket List. 🇬🇷
