Something a bit different for you today!

Simple syrup, so easy and much cheaper than buying it in the store!

Simple syrup
•1 cup sugar
• 1 cup water
Bring to a boil, let simmer until sugar is dissolved!
In the picture below I had some ginger to get rid of so I added it with the mixture. Filtered out most of the ginger once it was done simmering and left one. So that over time it absorbs more of the ginger flavor!

• let me know if you give it a try!! We use it for cocktails, making pop, lemonade, even coffee or whatever needs a little sugar!

I’m on a sourdough kick these days!

~ Sourdough Pancakes
• 2 cups of flour
• 1 cup of starter or discard
•1tsp of baking powder
•1 tsp of baking soda
• 2tbs of sugar
•1tsp of salt
•1 1/2 cup of milk
•1egg
•2 tbs of coconut oil (or oil you have)
•1tsp of vanilla
• dash of cinnamon (optional)
~ mix your milk, eggs, sourdough starter, sugar, vanilla, and coconut oil in a bowl, mix until combined
~ add flour, backing powder, baking soda, salt and cinnamon, mix until combined. (I added a little extra milk to make mine a bit more runny)
~ cook over cast iron or skillet. Or whatever you prefer!

~ note that this batter goes a long way, so you only need a small scoop to make a pretty large pancake! This made enough to feed 4 adults and 1 child with extra!! This is one of my new favorite recipes! I hope you enjoy it as much as we did! (Peep Delrae at the end trying to share her pancakes!)
