Cranberry Orange Bread

**Ingredients:**

- **For the Bread:**
- 2 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup fresh cranberries, chopped (or 1 cup frozen cranberries, thawed and chopped)
- 1 large egg
- 1 cup orange juice (freshly squeezed is best)
- 2 tablespoons orange zest (from about 2 oranges)
- 1 teaspoon vanilla extract

- **For the Glaze (optional):**
- 1 cup powdered sugar
- 2-3 tablespoons orange juice
- 1/2 teaspoon orange zest

**Instructions:**

**1. Preheat Oven:**
- Preheat your oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan, or line it with parchment paper.

**2. Prepare Dry Ingredients:**
- In a medium bowl, whisk together the flour, sugar, baking powder, and salt. Set aside.

**3. Cream Butter and Mix Wet Ingredients:**
- In a large bowl, beat the softened butter until creamy. Add the egg, orange juice, orange zest, and vanilla extract. Mix until well combined.

**4. Combine Ingredients:**
- Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
- Fold in the chopped cranberries gently.

**5. Bake:**
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.

**6. Cool:**
- Allow the bread to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

**7. Prepare the Glaze (Optional):**
- In a small bowl, whisk together the powdered sugar, orange juice, and orange zest until smooth. Adjust the consistency by adding more juice if necessary.
- Drizzle the glaze over the cooled bread.

**8. Serve:**
- Slice and enjoy! The bread is delicious on its own or with a bit of butter.

Mounds brownies 🥥🍫

ingredients:
- 1 brownie mix (9x13 size) (23x33 cm), mixed and baked according to box directions
- 5 cups (400g) shredded coconut
- 1 can (397g) sweetened condensed milk
- 1 cup (120g) powdered sugar
- 1 container (16 oz or 450g) chocolate frosting

instructions:
Mix the shredded coconut and sweetened condensed milk together with powdered sugar. As soon as you take the brownies from the oven, spread the coconut/milk/powdered sugar mixture over the hot brownies. Microwave the chocolate frosting just long enough to make it pourable. Pour the frosting over the brownies topped with the coconut mixture. Spread to seal the edges.

ingredients:
- 1 stick (113g) butter, softened
- 1 cup (200g) sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 3 tablespoons (15g) cocoa powder
- 1 teaspoon salt
- 1/2 cup (60g) all-purpose flour

instructions:
Preheat oven to 350°F (175°C). Cream together butter and sugar with an electric mixer until fluffy, about 3 minutes. Add eggs and vanilla extract and mix well by hand. Add cocoa powder, salt, and flour and stir by hand until well combined. Hand mix to make it gooey, because if you use a mixer, it will have more of a brownie or cake texture, rather than gooey. Grease an 8-inch (20cm) pie pan with butter or cooking spray, pour mixture into pie pan. Bake for 30 to 35 minutes until the center is set.
