Starting off we had a Louisiana lump crab stuffed Anaheim pepper served over a bacon tomato tarragon emulsion

Then we went into this delicious Bear Creek Farms Filet mignon- served with the creamiest whipped potatoes, charred broccoli, and a bone marrow black truffle jus

New side dish/ appetizer to add to the repertoire!

Thai Potato Salad- fish sauce, lime juice, palm sugar, MSG, green onion, red bird’s eye chilies, cilantro, and a touch of fried shrimp paste (optional, but really makes it a lot better)

I julienned the potatoes, then blanched the potatoes for about a minute to remove the starch, then shocked them in ice water made my vinaigrette, threw it all together then topped with fresh cilantro, fried garlic and fried shallots! It’s cold, crunchy, super spicy, and perfect for the weather!
