My pumpkin spice loving friends…

You can use these spices in your coffee (or whatever) to get pumpkin spice flavor. You don’t need to buy the sugary and overpriced syrups or special edition coffee mixes. This lets you have more control over the amount of sugar you put in your coffee and cut out some ultra-processed ingredients, too.

I recommend going heavy on the cinnamon unless you have very strong or freshly ground cinnamon. Go very light on the nutmeg and cloves, as they can be overpowering, and moderate on the allspice. You can premix it and dip your finger in to test it and give it a taste. (Just don’t eat too much nutmeg at once, or you may meet God.)

I recommend Demerara or Colombian brown sugar crystals for sweetness. It’s fantastic for coffee and for baking!

So in summary:
Cinnamon (a lot)
Allspice (medium amount)
Cloves (a little)
Nutmeg (a little)
Demerara sugar crystals (or Colombian brown sugar)

Adjust according to your preference!

Also, it’s the perfect spice combo for pies and cobbler. It’s the secret to making my homemade peach cobbler extra special! It’s also good for caramel dipping for apples.

This pretty boy came up to our window tonight. He is probably one of mine, as I have kept the Luna moth enclosure open for any that are still emerging to stay or leave as they please. When I stepped outside with my net, he immediately flew right into my net and let me pick him up like he knew me. When I tried to release him again, he wouldn’t leave me! He kept flying back to me and I had to run back inside. After that, he was stuck to our breakfast nook window, as close as he could get to me, refusing to go. Feels so bittersweet! I hope he finds a mate and makes lots of babies.
