Creamy Banana & Oat Porridge ππ₯£

Ingredients:
1/2 cup rolled oats
1 cup milk (dairy or non-dairy)
1/2 ripe banana, mashed
1/2 teaspoon cinnamon
A dash of honey or maple syrup (optional)
Instructions:
In a small saucepan, combine the rolled oats and milk.
Bring to a gentle simmer over medium heat, stirring occasionally.
Cook for about 5 minutes, or until the oats have absorbed most of the liquid and reached your desired consistency.
Remove from heat and stir in the mashed banana and cinnamon.
Add a dash of honey or maple syrup if you prefer a sweeter porridge.
Tips:

π Crispy Sweet Potato Nacho Boats π§πΆοΈ
The perfect fusion of comfort food and healthy indulgence!
π Ingredients:
2 large sweet potatoes (long and thick)
1/2 cup black beans (cooked or canned, drained)
1/2 cup corn kernels (fresh or frozen)
1/4 cup diced red onion
1/4 cup diced tomatoes
1/2 tsp smoked paprika
1/2 tsp cumin
Salt & pepper to taste
1/2 cup shredded cheese (cheddar or Mexican blend)
1/4 cup sour cream or Greek yogurt
1 ripe avocado (diced)
Fresh cilantro (for garnish)
Olive oil
π§βπ³ Instructions:
Prep the Sweet Potatoes:
Preheat oven to 400Β°F (200Β°C). Wash and slice sweet potatoes lengthwise into halves. Scoop out a shallow βboatβ in each half with a spoon (donβt go too deep). Lightly brush with olive oil and season with salt and pepper.
Bake:
Place sweet potato halves on a baking sheet, skin side down. Bake for 25β30 minutes or until soft but still holding shape.
Make the Filling:
In a bowl, mix black beans, corn, onion, tomatoes, smoked paprika, cumin, and a dash of salt and pepper.
Assemble & Melt:
Remove sweet potatoes from the oven. Fill each boat with the bean mixture and sprinkle cheese on top. Return to the oven for another 5β7 minutes, until the cheese is melted and bubbly.
Top It Off:
Remove from oven, drizzle with sour cream or Greek yogurt, add diced avocado, and sprinkle chopped cilantro on top.
