There are different professional salutations you can use. But the best advice out there is to call the hiring manager by name.

The font used in resumes should be professional, clear and easy to read. It should not give an added effort on the part of the hiring manager in reading intricate font or font style. Avoid using light or thin fonts as well because it is sometimes hard to read on screen or paper.

Right after the heading of the cover letter is the addressee. It is the company you are applying to. Make an effort to search for the name of the hiring manager or HR head to make it more specific and personalized.
