Eat food as medicine! Proper nutrition trumps genetics!

We often blame the lack of facial development ,crooked teeth and malocclusion on genetics. Rather, it is the deficiency of the three crucial fat-soluble vitamins A, D,K in the modern diet.

Vitamin K2-dependent proteins concentrate in the nasal septal cartilage of the fetus. Vitamin K2 depends on vitamins A and D for signaling, so all three vitamins are involved in the process of facial development.

One of the ways to help giving your body proper dose of Vit A is by eating liver. I explained to the kids the above information and let them choose to eat food ad medicine or eat medicine as food. They chose to eat liver rather than taking the supplements.

Dirty rice is a great tasty way to include liver in your food.

Recipe:
1 lb of finely chopped grassfed organic liver
3 cups of rice
3.5 cups of chicken stock
2 ribs of celery diced
1/2 large inion riced
Diced garlic
5 tsp of cajun seasoning
1 lb of ground pork of beef

Cook rice with 3 cups of stock
Sauté onion, garlic, celery until soften
Add ground meat cook for a few minutes
Add liver and rest of seasoning and cooking for a few minutes
Add remaining 1/2 cup of rice, stir
Combine cooked rice with meat and liver mixture. Done

Here’s what I made with the snails.

2 ways:

1) Snails stir fry with lemongrass, red chili, and lime leaves

2) Snails simmered in coconut milk, lemongrass and Vietnamese coriander herb.

Base ingredients for both dishes: ginger strips, garlic, salt, sugar, fish sauce

Key: soak, wash and scrub the snails many times until the soaking water is clear.

HUGE TIP: in the final soak, add smashed red chili pieces and soak for 30 minutes to 1 hr. The spiciness will force the snails to spit out all the slime.

Then drain the snails to let dry. Saute the garlic, lemongrass and ginger slices then add snails. Flavor with fish sauce, salt, sugar, coconut milk for the appropriate dish then let cook for 5-7 minutes. Add remaining ingredients the done.
