Crunchy zucchini noodles are tossed in a quick olive oil balsamic dressing and mixed with fresh vegetable that we ca0n make it our home.

Ingredients
3 medium zucchinis
3 roma tomatoes
1 cup fresh mozzarella*
2 Tablespoons fresh basil, chopped
3 Tablespoons olive oil.

Catfish makes us think of lazy summer days spent at the lake, and we love it for that. Baking your catfish makes this meal much easier, with no worry of oil getting everywhere.

INGREDIENTS
1/4 c. extra-virgin olive oil, divided
1 c. cornmeal
1 tbsp. Cajun seasoning
4 catfish fillets
Kosher salt
Freshly ground black pepper
Lemon wedges, for serving.
