In the U.S., lab-created dairy is approved for commercial sale through the FDAâs regulatory framework known as Generally Recognized as Safe (GRAS). Instead of traditional cattle farming, food technology companies use a process called precision fermentationâprogramming micro-organisms like yeast or fungi with DNA sequences to produce bio-identical milk proteins such as whey and casein. Once a manufacturer compiles thorough safety and toxicological data on these microbially grown proteins, they submit a dossier to the FDA. If the agencyâs food scientists evaluate the submission and have no further safety concerns, they issues a formal âNo Questionsâ letter, which legally clears the ingredient to be manufactured, sold and integrated into everyday retail food products.
Because these proteins are molecularly âidentical to standard cowâs milkâ, products containing them are often sold right alongside traditional items at major supermarket chains like Target, Sprouts and Kroger. Major consumer brands, such as Breyers and Bored Cow utilize these lab-created ingredients to formulate lactose-free and cholesterol-free ice creams and milks. However, because the federal government does not currently mandate explicit âlab-grownâ or âsyntheticâ titles on front-facing packaging, busy shoppers can easily purchase them unknowingly. To spot these products, you must carefully read the fine print on the back of ALL dairy products, which usually feature phrasing like âprecision fermentationâ, âanimal-free dairy proteinâ or ânon-animal whey proteinâ.
Lab-created dairy is rapidly advancing. While it promises to bypass the environmental toll of traditional animal farming and reduce animal cruelty, emerging scientific research and anticipatory lifecycle assessments have identified several proven and predicted human health and environmental concerns.
