🍂 Autumn has a sake — and it only arrives once a year.

We're honored to announce the arrival of #14852 Kikusui Hiyaoroshi Junmai Ginjo — the 2026 autumn limited release from Kikusui Sake Co., one of Niigata's most storied breweries, founded in 1881.

What is Hiyaoroshi?
Hiyaoroshi (冷卸し) is a centuries-old Edo-era tradition. Each spring, fresh sake is brewed, then left to rest and mature quietly in the coolest part of the brewery through the summer — sleeping, deepening, evolving. Only when the chill (Hiya) of autumn arrives does the brewery finally release (Oroshi) it to the world. The result is a sake of exceptional harmony: round, lively, and perfectly balanced, with beautiful notes of rice, honey, and roasted nuts.

The name Kikusui itself tells a story — it references a Noh theatre play in which the dew (Sui) from chrysanthemum (Kiku) petals grants eternal life. For over 140 years, that dedication to craft and meaning has defined every bottle they produce.
