🍪 Happy National Fig Newton Day! 🍪

Today, we’re celebrating the sweet, chewy goodness of everyone’s favorite nostalgic treat—Fig Newtons! 🎉 Why not take the celebration to the next level by making your own homemade version? They’re easier than you think and oh-so-delicious! 😋

Here’s a simple recipe to try:

Homemade Fig Newtons

Ingredients:
• 1 cup dried figs, stems removed
• 1/4 cup honey
• 1/4 cup water
• 1 teaspoon lemon juice
• 1/2 teaspoon vanilla extract
• 1/2 cup unsalted butter, softened
• 1/3 cup brown sugar
• 1 egg yolk
• 1 teaspoon vanilla extract
• 1 cup all-purpose flour
• 1/4 teaspoon baking soda
• 1/4 teaspoon salt

Instructions:
1. Prepare the Fig Filling:
• In a small saucepan, combine the dried figs, honey, water, and lemon juice. Simmer over low heat for 10-15 minutes until the figs are soft.
• Let the mixture cool slightly, then blend it into a smooth paste. Stir in vanilla extract.
2. Make the Dough:
• In a bowl, cream together butter and brown sugar until fluffy. Mix in the egg yolk and vanilla extract.
• In a separate bowl, whisk together flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
3. Assemble the Fig Newtons:
• Roll out the dough into a rectangle about 1/4-inch thick. Spread the fig filling in a line down the center. Fold the sides of the dough over the filling to form a log.
• Chill the log for 15 minutes in the refrigerator.
4. Bake:
• Preheat your oven to 350°F (175°C). Slice the log into 1-inch pieces and place them on a baking sheet lined with parchment paper.
• Bake for 12-15 minutes or until lightly golden.
5. Enjoy!
• Let your homemade Fig Newtons cool completely and enjoy this sweet treat with a cup of tea or coffee! ☕
