Easy Pumpkin Bars

Ingredients
- 1 tsp baking powder
- ½ tsp baking soda
- 8 oz canned pumpkin puree
- 2 large eggs
- ½ cup granulated sugar
- 1 tsp ground cinnamon
- ½ cup light brown sugar
- ½ tsp pumpkin pie spice
- ½ tsp salt
- 2 tsp vanilla extract
- ½ cup vegetable oil
- 1 cup white whole wheat flour

Preparation

In a medium mixing bowl.

Combine flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice with a whisk.

Set aside.

In a large bowl, beat eggs until combined.

Whisk in sugars and oil.

Add pumpkin and vanilla and stir together.

Whisk the flour mixture into wet ingredients.

Stir until you can't see any flour.

Let the batter rest while the oven is heating.

Heat oven to 350F degrees.

Spray a 9 x 13 baking pan with nonstick cooking spray.

Pour batter into the pan. Once the oven is heated, place the pan in the oven and bake for 20 minutes.

Cool pan on baking rack.

This incredibly moist, expertly spiced carrot bread is worth the try! 🥕🍞

Carrot-sesame Seed Bread

Ingredients
- 1 packet active dry yeast, 7 gm
- 2.5 cups all purpose flour
- 1.5 cups shredded carrots, about 3 whole carrots
- 1.5 tbsp olive oil
- 8 tbsp orange juice
- 1.5 tsp salt
- 1/3 cup sesame seeds plus more for garnishing
- 1 cup spelt or whole wheat flour
- 10 tbsp warm water

Preparation

In a bowl, add carrots, orange juice, warm water and yeast and let it sit for 5 minutes. To it add olive oil, both flours and salt. Knead it into a tight dough. Cover and let it sit for 10 minutes.

Put oil on the working surface and knead dough lightly for about 10 seconds.

Let it sit covered for an hour.

Clean oil from the working surface and sprinkle some flour. Knead the dough for a few seconds.

Roll it tightly and tuck both the ends at the bottom and lay it in a parchment paper lined loaf pan with sides tucked on the bottom. Cover and let it sit for another hour.

Preheat the oven to 400F degrees.

Bake uncovered for 50 minutes.

Take it out of the pan once cooled and let it cool further.

Store covered for up to 3-4 days.

Masala Raisin Chicken

Ingredients
- 400g chicken
- 1 1/2 tbsp (or as needed) plain chili powder (add water and mix into a thick paste)
- 2 tbsp dried raisins
- 1/2 tbsp ginger paste
- 1 tsp garlic paste
- 1/2 tbsp onion paste
- 1 tomato - chopped
- spices - 1 cinnamon, 1 star anise and 3 cloves
- 2-3 sprigs curry leaves
- 3 tbsp oil
- salt to taste

Preparation

Heat oil and fry spices with ginger, garlic and onion paste. Just for 1-2 minutes.

Add chili paste and continue to fry over low heat till oil splits.

Put in chicken, tomato, curry leaves and raisins. Season with salt.

Add a bit of water if needed to cook the chicken.

Continue to stir till everything comes together; a thick gravy coated over the chicken pieces.
