Kettle souring complete! PH of 3.65!!!! That Brettanomyces sure did eat! Look at that thick layer of yeast! Moved and now fermenting away for at least a week!

“PARTY DEMON” and “Little NICKY” are bottled! Excited but bummed as it will not be the same as last year. Just realized the organic malt I used was different and much maltier than I wanted. It will still be beer!

Secondary racked “PARTY DEMON” with tequila soaked jalapeños today! If spice isn’t your thing, then “LITTLE NICKY” is the refreshing alter ego you are looking for!

Made “Beer”. That’s the name of this Texas Summer Ale. Malty and slightly sweet made with local Round Rock wildflower honey, coriander, lemon peel and orange hop characteristics. Ready and kegged for your enjoyment!

Hibiscus, Himalayan Sea Salt, and Lime Peel boiling in then kettle in order to wake the “PARTY DEMON”! The pilsner will be ready for the hellish heat of summer! Couldn’t have done it without my little helper!

Summer is here and it has awoken the “PARTY DEMON”!

Squeezed in a quick brew a few weeks ago and kegged it today! This “TBD Name” brew uses local Texas honey, oats, Munich malt, Coriander, Lemon Peel, and Windsor Yeast. Great easy-drinking Texas summer ale!

“Cairo” Hefeweizen has been a hot with the wife! Been really busy lately so a brew is over due! The “Party Demon” is haunting me!!!!!!!!
