Central Texas Lamb will be transitioning to a new model in the coming months.

Our program will increasingly focus on whole-animal sales — custom processed to your exact specifications, with pickup at our USDA processor near Temple, Texas.

This program will be available to families, restaurants, and distributors who prefer full-animal allocation and complete control over fabrication.
We are also seeking a distributor partner to integrate Central Texas Lamb and Goat into their current protein offerings. This partner would have the opportunity to service our existing Houston restaurant accounts, while also adding lamb and goat alongside their established beef and pork programs — particularly across Waco, Temple, Austin, and Dallas, which are all closer to our processor.
