This was a random, not much in the house meal that was a HUGE hit and I’ve made the kale this way twice since and was met with the same enthusiasm!

*baked sweet potato
*slow cooked pasture raised pork shoulder in an oniony broth
*the sprinkles in top: KALE! I put a bunch of kale pieces in a pan with avocado oil, nutritional yeast & TJs falafel mix (yes this combo again!) sautéed until crunchy and then sprinkled with sea salts! I swear it’s like savory crouton sprinkles with a cheesy edge!

Yum. The perfect flexitarian meal with a little touch of fall flavors 🍂

*broiled grass fed flank steak
*roasted asparagus
*arugula salad with sun dried tomatoes & balsamic vinaigrette
*homemade roasted butternut squash soup (made over the weekend) topped with sea salt & pepitas
*my new favorite mocktail: lime juice, seltzer, lime bitters, splash coconut water

💥Million Dollar Breakfast Idea💥

I am only posting this crazy blurry photo bc I want it to live forever in my feed so everyone knows when I made it big as a food influencer 😂 But for reals, if you have kids especially: Popsicle Yogurt!

I was doing a freezer clean out and found some homemade popsicles. Rather than toss them I thought I’d defrost them overnight and add them to yogurt for something different. THEN I thought, I’ll have the kids help me - BINGO. This morning they saw me mix the melted popsicles into plain yogurt and immediacy lit up saying “we’re having popsicles for breakfast!?” Yes, kids, yes we are 😎
The popsicles were various berries and bananas mixed with coconut water and frozen. So nothing crazy but THEY think they are dessert. Add toppings and oh man, minds are blown! So here’s what you do:

1. Make popsicles out of fruit and coconut water. Forget about them for 6 months 😂😂😂
2. Enlist children to help defrost them so they know they were popsicles the next day.
3. Mix melted popsicles with plain Greek yogurt (protein), flax seed (omegas and fiber) and top with crushed nuts (fat & protein) and some keto granola like , and more fruit if desired.
4. Get ready for kid enthusiasm & full tummies while enjoying your own dessert for breakfast that keeps blood sugar in ✅

Allow me to introduce world’s easiest meal!

*sautéed bell peppers & onions
*paleo chicken sausage from Costco, sliced & seared
*Right Rice cooked in broth and with added garlic sautéed spinach

***Fed 4 people and leftovers for 1 lunch!

Where my poke lovers at!? 🐠

Ok so this isn’t technically poke because the salmon is cooked but it’s got the right flavors and vibe and is a great alternative for those who don’t enjoy raw fish (or the insane amount of sugars and oils in poke sauces).

*mix of jasmine rice cooked in bone broth (and cooked to be stickier) and cauliflower sushi rice (it’s super easy and really yummy!)
*homemade pickled cucumbers
*wild salmon baked in lemon juice, tamari & furikake
*seaweed snacks

Strawberry (cottage) Cheesecake! I made the viral cottage cheese cookie dough a while back and this is the first step before mixing in flours. I licked the spoon and thought “whoa that’s cheesecake!” 🤯

*1 cup cottage cheese
*2 Tbls honey or other sweetener
*splash vanilla
—> blend in a blender until smooth then top with berries & crushed nuts (or graham crackers for true cheesecake essence)
