Freezer Jam! Strawberry freezer jam is the best tasting Strawberry jam on the planet. Easy to make with either our SSP or LP pectin. Simply hydrate the pectin in water. Add crusher berries and sugar in a separate pot. Mix the two together and ladle into jars and cap. Let set over night to gel and store in freezer. No cooking (no flavor degradation). No foam (bigger yield). Flavor is amazing! After tasting freezer jam for the first time, I thoughts why would you eat anything else. We have recipes for most fruits. I have to remind myself that many artisan producers are still using Certo out of the grocery store. This is a very expensive way to buy pectin. We sell our LP pectin mix, it works just as good at 1/16 of the cost. 6 ounces of hot water in a blender. Mix in 1/2 ounce of our LP mix and waalla, you have 6 ounces of liquid pectin. Keeping a clean cooking environment? When most of us think of clean, our minds go to pots, scoops and cooking surfaces. That is a good thing. However, we need to understand that most environment problems in our cooking environment come from places not often cleaned or never cleaned. Some examples, Air conditioning and heating outlets and duct work. I walked into my bank a couple of years ago and noticed the hvac outlet above the teller had black residue on the sheet rock. It was obvious it was coming from the vent. I encouraged the bank teller to bring this to the managers attention. She must have because it was gone the next time I was there. My point here is too encourage everyone to be aware of your environment, even when everything looks clean. Another piece of equipment to avoid, evaporative coolers. They discharge high amounts of moisture and should in general never be used in confined area's. Whenever possible use a refrigerant base air conditioner.
