I know it’s a bit loud and creeky, but it is old and has done a lot of work over the years. Not flashy and new, but it never lets us down. (I hope you’re watching from above, Tony. )

Years ago our farm grew hybrid wheat, relying on sprays and chemical fertilizer to maintain a successful crop. Today we grow heirloom grains. They are hardy and require no chemical intervention. The fields are not perfectly free of weeds and the crop does not set records for production, but who needs that in a good loaf of bread? Grown and milled on our farm.
