Polyester is as moisture wicking as it gets and dries fastest.

Don't like the "sheen"
There are a couple more matte options..

And 50/50 blends are a 2nd best when it comes to moisture wicking and fast drying.

50/50 cotton/polyester blends are very popular as summer work wear for working outdoors.
