I really love Taco Bells new rolled tacos-taquitos but they are so freaking expensive. So, i decided to make my own. Now, this isn't an easy depression meal, but if you are having a day where the fog is kinda lifted and you want to treat yourself, I highly recommend.

Total cost for around 30 taquitos-$8.00
Taco Bell cost for 8 through Doordash, $28(not including tip)

I used one pound of ground turkey. I seasoned pretty heavily with garlic, cumin, onion, smoked paprika, pepper, and a bit of montreal steak seasoning because I like it. Add about 1/4 cup water and break up your turkey. Yes, you can use whatever kind of ground meat or ground non meat you prefer. Please don't be all up in my comments asking of you can substitute bread for tortillas.
Hulk smash that mixture until its cooked thoroughly. Then drain, keeping the juice. If you need more juice, repeat the meat seasoning process without the meat OR be a lazy a hole like me and dump a can of green chili, green or red enchilada sauce or whatever sauce you freaking like.
Then take a package of CORN torillas(I swear to all things if you comment you dont like corn tortillas, I'll find you)
Dunk them, one at a time into the juices. Dunk both sides and remove and set of a plate.
Now, shred up some cheese(measure with your heart. Who am I to tell you how much cheese to use?). Spread a thin layer of cheese over the tortilla then put a line of ground meat just off center. Come on, you know how to make a line, just use a spoon insects of a dollar bill and your cutting board instead of a hookers ass.
Roll up the taquitos and place them seam side down in the air fryer.
If you don't have an air fryer, use an oven of the broil setting LOW BI***ES NOT HIGH and turn over about 5 minutes in. If they are crispy on both sides, they are done
They aren't beautiful like store bought ones but the taste is 100x better. They are freaking amazing
