Only in Pennsylvania could something as simple as an egg become a tradition this colorful. Pickled red beet eggs aren’t just food, they’re part of our heritage. Born from Pennsylvania Dutch kitchens, they were a way to make use of every garden beet and leftover egg from the farm.
The brine turns them that deep magenta color, with a tangy bite that takes you straight back to Grandma’s table or the counter of a small-town tavern. You’ll find them in Mason jars, fire hall dinners, and corner bars from Lancaster to Luzerne.
They taste like home. Sweet, sour, old-fashioned, and proud. In PA, we don’t just eat history, we pickle it.

My bucket garden. The corners are zucchini and squash the center is watermelon. The cattle panel is for the watermelon to run on above the ground to keep the dog out of the melons.
