INTERN ALERT!

This week, we've loved having dietetics and nutrition student intern Shayla as part of the Edmond Mobile Meals kitchen team! 👩‍🍳🥗

Throughout the week, Shayla has worked alongside our chefs, assisting with meal preparation, menu planning, and supporting our kitchen operations while learning firsthand what it takes to prepare hundreds of nutritious meals for homebound seniors each day.

Her passion for nutrition began at a young age. Growing up in a Spanish-speaking household, she often served as the translator during her younger brother's nutrition appointments because her mother speaks only Spanish. Those experiences, combined with an introductory nutrition course in college, inspired her to pursue dietetics and reinforced the importance of having bilingual professionals in healthcare.

One of the things that impressed Shayla most was seeing our chefs create meals that are both delicious and nutrient-dense, as well as learning about our medically tailored meal program for clients with diabetes.

"It is amazing to have that option for people who aren't able to prepare these kinds of meals for themselves. The importance of these meals is incredible."

INTERN SPOTLIGHT!

We were excited to welcome Spencer Schafer, a graduate student in the UCO Dietetics and Nutrition program, to Edmond Mobile Meals this week!

Spencer spent the week alongside our kitchen team, learning what it takes to prepare more than 350 nutritious meals each day for homebound seniors. From batch cooking and meal planning to food cost analysis, he jumped right in and became a valued member of our kitchen crew.

In addition to lending a helping hand, Spencer shared his knowledge by creating a nutrition brochure for our clients highlighting the importance of getting enough vitamin D, especially during the summer months.

Originally from Springfield, Missouri, Spencer earned his bachelor's degree in Nutrition and Dietetics from Missouri State University. His passion for food science, chemistry, and nutrition has led him to pursue graduate studies at UCO, where he hopes to build a career in food research and development.
