Step 1οΈβ£:
In a large pan, roast sweet potato cubes, carrots and onions (coated lightly in EVOO, salt & garlic) @ 425 for 40 minutes!

Cook up some yummy quinoa in the instant pot (makes it happen quicker!)

Dice up cucumbers, kale and romaine to add crunch to the salad!

Best dressing:
1/2 cup EVOO
1/2 cup rice wine vinegar
1/4 cup Tamari
1/8 cup honey
1 clove garlic
1tsp ground ginger
