I want to share which is one of my wife and I most favorite dishes enchiladas del convento or mineras as how some people call them this brings back childhood memories when we were at the plazas in our hometowns or my mom`s sunday dinner I still remember until this day the smell of tortillas simmering in chile guajillo sauce and lightly fry in the big comal topped with queso fresco .
