It’s time to meet the team behind Deviation Distilling!

Meet Dave, our master distiller! The mad scientist in the pot still was a chef in his past life and brings his culinary expertise to our craft spirits!

To get to know him a little better I asked him a few fun questions!

What’s his favorite spirit? “My favorite spirit to drink is whiskey, particularly rye whiskey. I can’t get enough of those spice notes. I love how different they can taste from producer to producer depending on mash bill, age, proof, and a million other details that I won’t bore you with…

My favorite spirit to make is definitely gin. I love having the ability to tweak the flavor profile in real time, rather than waiting years for a whiskey to mature.”

What’s his favorite cocktail at Deviation? “I’d say the Barrel Aged Spice Trade Old Fashioned. It straddles the line between a whiskey and gin cocktail. And it’s our gin that is made with rye, and aged in a rye whiskey barrel. Sort of a no-brainer if you read my answer to the first question.”

A fun fact about him? “In my former life and career before distilling, I was a chef in some pretty amazing restaurants. I got the opportunity to meet and cook for some really interesting people, such as Jimmy Buffet, Heath Ledger, Bono, Billy Joel, Tom Waits, and Barack Obama.”
