This curried pumpkin soup is just what you need to eat on those chilly fall nights. And…Because it’s October what is more perfect than curried pumpkin soup? One cup of pumpkin contains over 200 percent of your daily vitamin A intake, which aids in vision. This is particularly useful with dim light for all you night shift nurses. and post workout carbohydrate for you to pair with your protein. Mashed sweet potatoes are extremely easy and taste delicious with just a few paleo approved ingredients. When making mashed sweet potatoes, I used Keri Gold grass-fed butter. This is because grass-fed butter is one of the most important foods you can consume for a healthy heart. Grass-fed butter is very rich in vitamin-K2 which is important in decalcifying your arteries. Vitamin-K1, which us nurses are more familiar with, is important for blood clotting. Enjoy and Mangia!

NEW BLOG POST: SALTY SWISS CHARD ~Lately I have been enjoying getting fresh organic greens from the farmers markets this summer. One of my favorites is Swiss Chard. Swiss Chard has a very nutty taste, and is rich in antioxidants. Chard leaves have over 13 antioxidants some of which are also found in broccoli and kale. The colors in the Swiss Chard stems not only make this dish look beautiful, but scientists have identified over 19 pigments that have been proven to have anti-inflammatory, antioxidant, and detoxification properties. So…why not learn how to make it! This is a great side dish to take to a picnic or BBQ because this dish pairs great with any type of protein, and can be made in bulk. Enjoy and Mangia!
