Food photographers love chocolate. And they hate it. On one side, chocolate always takes it all. It`s beautiful, sexy and tantalizing. On the other side, chocolate is cranky as hell! Don't touch it, don`t breathe at it and even don`t look at it.
Get a deep dive into professional chocolate shooting with 3 tips π
π¬ Gloves and cold tools.
You don`t want to spend an hour retouching your fingerprints, so don`t use your bare hands to create a composition. Just take a bunch of medical gloves and try not to touch chocolate too much. If your shooting location is not in the fridge, you need to work fast or use cold tools from the fridge to move sweets and bars carefully. Your goal is β a smooth and shiny surface.
π¬ Room temperature.
Keep the temperature of your studio around 20 degrees Celsius using air conditioning. The lower the better. You need at least an hour to do the proper shot and your room is constantly heated by a number of lighting tools. Even if you feel that the room temperature is comfy for you, it is already too hot for chocolate. The moment it started melting you need to stop all the process and get new products.
π¬ Air dryer.
Use it to fix fat bloom on the surface, but be careful not to melt it. Fat bloom can happen when the chocolate gets too warm and the cocoa butter separates from the crystallized chocolate mixture and then re-solidifies and comes to the surface. If you work with chocolate outside of the kitchen or you get the product delivered through miles of road, you need to know the risk.
