To help you celebrate, here’s a simple and delicious Irish-inspired side dish you can make right in your apartment:

🥔 Irish Colcannon (Creamy Potatoes with Cabbage)

Ingredients:
🥔 2 lbs potatoes (peeled & chopped)
🧈 4 tbsp butter
🥛 1/2 cup milk or cream
🥬 2 cups chopped cabbage (or kale)
🧅 3 green onions (chopped)
🧂 Salt & pepper to taste

Instructions:
🍀 Boil potatoes until soft, then drain and mash.
🧈 In a pan, sauté cabbage (or kale) in butter until tender.
🥛 Warm the milk and mix it into the potatoes for a creamy texture.
🥄 Stir in the cabbage and green onions.
