This Black Bean Soup recipe has been around the family for years. Great source of fiber (which is just as important as protein btw - it’s got plenty of that, too). It came from the show Good Deal with Dave Lieberman.
You can pick up most of these items at a local food pantry, and probably have some in your own pantry right now.
10 slices bacon, finely chopped
2 medium onions, chopped (about 2 1/2 cups)
6 garlic cloves, pressed
1 (14 1/2-ounce) can reduced-sodium chicken broth
1 1/2 cups canned chopped tomatoes
2 tablespoons ketchup
2 teaspoons Worcestershire sauce
1 tablespoon chili powder
4 (15 1/2-ounce) cans black beans, drained but not rinsed
Kosher salt and freshly ground black pepper
1 bunch cilantro
juice of 1/2 lime
Put the bacon into a large heavy pot and place it over medium heat. Cook until it starts to give up its fat, about 4 minutes. Stir in the onions and cook, stirring, until they start to turn translucent, about 4 minutes. Stir in the garlic and cook until you can smell it, about 1 minute. Add the broth, tomatoes, ketchup, Worcestershire, and chili powder. Stir in the beans, turn the heat to high and bring to a boil. Adjust the heat so the soup is bubbling gently and cook 10 minutes. Season with salt and pepper.
Meanwhile, pick off all the thick stems from the cilantro. Wash it and shake dry. Chop the cilantro coarsely and stir it into the soup when it has been simmering 10 minutes. cook until the soup is thickened, about 5 minutes. Stir in the lime juice.

We see it every week at our grocery giveaways: people apologizing because they 'don't usually need help,' or wondering if asking for enough food to feed their kids is 'too greedy.' Let's change the narrative. If you need it this week, come take it. If you have extra next month, come give it. It's a circle, and we're all in it together.

As our Supper Clubs continue to grow, we want to take a moment to recognize someone who rarely seeks recognition himself. The truth is, this vision started with Steve Estes . Long before sold-out dinners and community support, Steve saw a way for MWM to create a sustainable model through food, community, and purpose.
As co-owner of Brewed , he has generously opened his doors to us and helped create a platform for this movement to grow, never asking for anything in return.
Steve is tough, thoughtful, and one the most generous people we know. While he prefer to stay behind the curtain, it’s important the community knows whose vision helped make this possible.

Parenting Status: Currently looking for anything to keep the kids busy so they don't turn on me.
If you're in the same boat, Timberview Farmstead is hosting their final open Saturday of the spring today at 10:00 AM.
There will be baby animals, hayrides, and fishing to distract the kids. Plus, the Meals with Meaning team is running the food truck, so you don't even have to worry about making lunch. Come eat, say hi, and help us kick off the weekend!
