IT’S NATIONAL COOKIE DAY!!!

In celebration of this amazing day. Chef is sharing one of his holiday recipe for you to enjoy!

GINGERBREAD LATTE COOKIES

What You Need
1 ½ sticks salted butter, room temp
¾ cup light or dark brown sugar
3 tbsp espresso powder or instant coffee powder
2 tsp vanilla extract
1 large egg
⅓ cup blackstrap molasses
2 ¼ cups + 1–2 tbsp all-purpose flour (as needed)
1 ¼ tsp baking soda
2 tsp ground ginger
1 tsp ground cinnamon
½ tsp kosher salt
Granulated sugar (for rolling)

BROWN BUTTER ICING
1 stick salted butter, room temp
1 ¾ cups powdered sugar
3 tbsp milk
½ tsp vanilla bean powder
1 pinch cinnamon

HOW TO MAKE THEM
1. Cream & Flavor:
Beat the butter, brown sugar, espresso powder, and vanilla until creamy. Mix in the egg and molasses.
2. Dry Ingredients:
In a separate bowl, whisk together flour, baking soda, ginger, cinnamon, and salt. Add to the wet ingredients and mix until a soft dough forms. If sticky, add the extra 1–2 tbsp flour.
3. Roll & Bake:
Scoop the dough into balls and roll each one in granulated sugar.
Bake at 350°F (175°C) for 8–10 minutes, until the tops are just set.
4. Make the Icing:
Brown the butter in a small saucepan until golden and fragrant. Let cool slightly, then whisk with powdered sugar, milk, vanilla bean powder, and cinnamon until smooth.
5. Drizzle & Enjoy:
Once the cookies are completely cool, drizzle or spread with the brown butter icing.
