I'm not just one of the owners, I'm also a client.

Here I have made a throwback pie from my days at Adrica's in Mount Adams, many lifetimes ago.

I used a Momo's pizza pie dough from our little freezer, some chopped fresh spinach, crumbled feta, thin sliced tomatoes and topped with shredded mozzarella.

All sold here at Dee Felice Market.

Pro tips: (and this one is CRITICAL to a perfect pie) use a pizza stone and let the oven and stone fire up at 550⁰ or close as you can get for an hour at least.

Slice the tomatoes thin and let drain on paper towels for 20 minutes to remove excess moisture. Its okay, there will still be PLENTY of liquid in them.

Don't load up on any of the toppings. A heavy wet pie will become soggy and the dough won't get to rise. A nice non crowded arrangement is ideal.

Before adding any ingredients, lightly flour the dough and stretch to desired thickness and size. Drizzle a tiny amount of olive oil on the edges and spread only on that edge, not into the center of the pie. Sprinkle a small amount of garlic powder and salt to that edge.

Turn the pie halfway through the baking. About 4-5 minutes. Full bake 7-8.
