So I threatened to make tacos tonight from the leftover brisket and short ribs. I also went to the Hurricanes game last night which they won!! Yeah!! I had a little too much fun at the game so a little hard to pull this off but it turned out great. Check out the pics. Feelin better now.

A quick smoke session today. Brisket flat and crosscut short ribs courtesy of my longtime friend Chuck and Lisa Vailes who raise the tastiest clean grass fed beef. Slather the brisket with our mustard sauce which is just making everything better and did the short ribs with the always make beef taste better sauce. Smoked them till they hit 185 then wrapped the ribs, added rest of Mop sauce and back in smoker till 200. Brisket I did a boat and took it to 202 then pulled and wrapped. Both in a 150 degree oven to hold till dinner. Ribs were great, ultra smoking and rich. Brisket, I should have taken it to 205 or higher. It was tender but not quite there. Either way Taco Tuesday is coming with the left overs. Nothing better than smoking meat!!
