Baked Apples with Maple Oat Filling 😍🍎 This is such a delicious fall dessert and a great way to use up lots of apples from apple picking! This recipe can easily be made vegan, gluten free and/or refined sugar free (check out the notes below).

It’s almost like an apple crisp, with a buttery oat streusel filling/topping, but stuffed into a whole apple instead. 

The filling has 2 secret ingredients that add so much flavor: crystallized ginger & a splash of bourbon! Both are optional, but they really add a lot!

4 medium apples
3/4 cup old fashioned rolled oats 
1/4 cup all purpose flour (or gluten free flour) 
1 tsp cinnamon + a pinch of nutmeg and cloves
Pinch of salt
2 tbsp finely chopped crystallized ginger (optional)
1/4 cup chopped pecans
5 tbsp melted butter (or coconut oil)
1/4 cup pure maple syrup
1 tsp vanilla extract
Optional: a splash of bourbon 

Preheat oven to 350˚F. 

Using a sharp paring knife, carefully insert into the apple core and twist the knife to remove the seeds and core. Once the opening is big enough, use a spoon to scoop out more apple so there’s enough room for the filling. 

Mix together the oats, flour, spices, salt, ginger and pecans, then stir in the butter, maple syrup, vanilla and bourbon until well combined. 

Divide the filling between the 4 apples. 

Bake for 35-45 minutes (the longer they bake, the softer the apple will be. I personally like mine when it still has a little bite to it.)
