This recipe from Chili Pepper Madness uses butter, flour, milk, cheese, and a little pickled jalapeño juice for that nacho-stand flavor.

Make it with Tri State Colby for a smooth, mild sauce, or use Tri State Cheddar if you want a little more classic cheesy bite.
