Today I'm making our "Make Ahead Pasta Sauce", for tomorrow's Eggplant, Basil, and Parnesan. I use this sauce for other things like lasagna or meatballs as well...its my base. The recipe is in my cookbook (listed in the bio). Mushrooms are a must for me, and today included a pint or so of arugala/spinach mix hanging in the fridge.
