Strawberries Are Finally Here 🍓
June has officially arrived, and with it comes one of our favorite moments of the year: local strawberry season. After months of apples, citrus, and patiently waiting, the first berries are making their way into the bakery, and we're very ready for it. This week you'll find plenty of familiar favorites alongside a few things we think deserve a little extra attention—including a returning cake, a new summer drink, and a reminder that some of our best items are hiding in plain sight.

Happy Friday from Floriole —
Chicago finally feels like it’s leaning toward summer and we are fully participating. Rhubarb is everywhere, berries are right around the corner, and this weekend’s menu is stacked with things that feel equally appropriate for a picnic blanket, a dinner party, or eating standing over your kitchen counter while hiding from your family for five minutes. No judgment here.
And yes — Smoked Salmon Focaccia is back this weekend with charred spring onion cream cheese, everything seasoning vibes, and all the “bagel energy” without requiring you to wait in a 45-minute line somewhere.

Memorial Day Weekend
Memorial Day pickups are underway, so if you’re headed to a gathering and would prefer to arrive looking wildly organized and thoughtful, we can help with that. Berry crisp is on deck, there are plenty of things that pair well with grilling season officially kicking off, and frankly nobody has ever been disappointed to show up carrying good bread.
Also: almond milk has officially entered the chat. Your iced latte people may now rejoice.
A Very Good Time To Be A Bakery Lover In Chicago
One thing we’re genuinely excited about right now: Chicago is finally becoming home to more and more truly excellent craft bakeries. Honestly? It’s overdue. This city deserves a thriving bread and pastry scene and we’re thrilled to see talented people opening beautiful new spaces and raising the bar for all of us.
Please go try the new spots. Support small bakeries. Eat the laminated pastry. Buy the fancy loaf. Then keep us in your rotation too. A strong bakery culture only happens when people show up for it — and Chicago feels like it’s building something really special right now.

Rhubarb, Asparagus, and Other Signs of Life
We’re leaning all the way into the season—longer days, farmers markets waking up, and pastries that actually taste like spring instead of wishful thinking. Spring galettes have officially entered the chat, and this is where things get good. Our signature flaky pastry becomes a frame for whatever’s coming out of the market right now: rhubarb doing its tart, punchy thing and asparagus having its annual main character moment. (Relax—they’re not together. We have standards.) If you needed a reason to swing by, this is it.
